This is one of my favorite recipes. It is spinach dip made from Knorr's Vegetable Recipe Mix.
I will give directions according to the package with one exception. Southern cooks use Duke's mayonnaise!!!
Knorr Spinach Dip
1 package (10 oz.) baby spinach, chopped or 1 package (10 oz.) frozen chopped spinach, thawed
and squeezed dry - I use frozen
1 container (16 oz.) sour cream
1 cup Duke's mayonnaise
1 package Knorr Vegetable recipe mix
1 can (8 oz.) water chesnuts, drained and chopped (optional)
3 green onions, chopped (optional)
Combine all ingredients and chill about 2 hours.
Serve with your favorite dippers.
I have made this with everything, without the onions, without the chesnuts. Just depends on what I have on hand and if it is for me or an occasion! I have also hollowed out a round piece of bread and put the dip in there and it makes a nice presentaion. Serve with the pieces of bread hollowed out, or chips. Whatever you like. Enjoy!

4 years and counting!
Ok, so yesterday, September 20th was mine and Jimmy's 4 year anniversary. I got beautiful roses at work from him. I took some pictures but my program is being annoying and I don't want to put up a crooked photo! Anyway, the top picture is our wedding invitation that someone had painted and framed as a wedding gift. I thought it was neat.
I do have a recipe, but since the hubby shares the computer too, it will get on here in the morning! Can't wait to see and try everyone's!

Good Times
I went to my parents this evening to eat dinner and of course, listen to some Carolina football. The first picture is a shot of the beautiful crescent moon with the sky as the sun was going down. The second is the ONLY way I know to listen to football, with the radio on and the doors open on the truck right outside the shed! Thanks, Dad! Then the last picture is me, my mom, and my niece Emily trying weird things. You overlap your fingers. Emily was the only one to do it and stay. Me and mom just couldn't get it.
Oh, by the way Carolina won! Go Cocks! 38-3 was the score. They have won 3 and lost 0!

Just to touch base
I haven't had any pictures to post, but I did have a great time on Friday. We spent the weekend watching Football! Fri-Beaufort High (lost), Sat-Carolina Gamecocks(won), then after church we went to Beef O' Bradys and it was the start of NFL....so EVERY tv was a different game! Ugh! Anyway, at least my husband has a decent hobby!
Hope everybody is having a Happy Monday!

Are you ready for some football?
Ok, so this is my hubby back in the day when he use to play for Beaufort High. I am posting this because he has such a love for his sports, especially football. He and his dad have followed Beaufort High since forever ago!
Anyway, the moral to this is that I try to go to the home games to please him, of course. I have gotten better about it over the past couple years. I actually bought a cowbell from the John Deere store in Tennessee this past April (lighter green than the teams colors, but I like John Deere!). I have accumulated a lady friend, about 6 years younger than me, but she is another die-hard fan's girlfriend. We have decided to go to tomorrow's game against Goose Creek in Charleston. We are going to venture there after work. But I am so excited about going with another woman to have girlie conversations. Jimmy is soooo excited too! I am sure it will be fun. I can't believe I am going to say this, but Go Eagles! ( Still a Rebel at heart! Go THA!!)

Busy Bees
I decided to get outside for a few minutes later today since the rain had stopped. I don't know what kind of bug this is but he was determined to land on my wind chime that I have hanging on my swing. He managed to land and go inside the hollow piece of wood. By the way, it started raining AGAIN after I went inside. But the good Lord knew we needed it.

Food and Football
I cheated. This is one of my favorite pictures of Jimmy and I. It was taken last year, I think!
We are supposed to be watching Carolina Gamecocks play on pay per view tonight, if the cable works and the weather isn't bad. Go Cocks!!

Ok, so it has been raining like all day and I decided to stay in the kitchen. I have had a craving for potato skins. So, I have never made them, until today. I thought they turned out pretty, so here is one.
